Asian Grilled Chicken Thighs
1/3 cup packed brown sugar
1/3 cup soy sauce
2 1/2 Tbsp lime juice
1/4 tsp cayenne pepper
1/4 tsp curry powder
4 garlic cloves, minced
1/2 Tbsp grated ginger
6 boneless, skinless chicken thighs
Preparation
In a large bowl, mix together the sugar, soy sauce, lime juice, grated ginger, cayenne pepper, curry power and ginger. Mix the ingredients until the sugar dissolves. Combine the marinated and chicken in a large plastic zip lock bag. Place the zip lock bag in the fridge for at least 2-4 hours, for maximum flavor leave in fridge overnight.
Preheat grill to medium heat. Grill for 5-10 minutes on each side. If you have left over marinade you can brush it on during the last few minutes of grilling.
