Grilled Chicken Breasts with Lemon Zest

Quick and simple grilled chicken breast recipe, you can serve the chicken breasts alone or make up your own entrée. Sliced in a salad, topped with cheese and place on a toasted bun, simply delicious!

Serves 4


4 boneless, skinless chicken breasts
6 tablespoons extra virgin olive oil
4 large garlic cloves, minced (use a garlic press)
1 teaspoon dried thyme
½ teaspoon dried oregano
1¼ teaspoon salt
½ teaspoon pepper
1½ teaspoons lemon zest (you’ll need one lemon)


1. Prepare the chicken breasts so that they are an even ½ inch thickness.  You may need to pound the meat with a mallet to obtain the right thickness.

2. In a large zip lock bag, mix all the ingredients together. Then add the chicken breasts and coat the meat evenly. Seal the bag and place in the refrigerator. Let the chicken marinate for at least 4 hours. For even more flavor let the chicken marinate for up to 12 hours.

3. Preheat grill to high heat. Place chick breasts on the grill. Close the grill cover and grill for 2-3 minutes per side.  Make sure the chicken breasts are well coated with marinade.
